A Trial Run...

I've been searching for a Vegan Recipe for Banoffee Pie.  It's a pie with toffee, bananas  and Cream.  Sounds yummy?  Well I've  never had a chance to taste it because it has dairy cream on top... I've never been able to find one on the net, probably because I'm just crap at finding things on Google...  Anyway, here is what I came up with while having my shower, trying to get ready to see the play Romeo and Juliet.

Vegan Banoffee Pie

1large banana whipped in the blender

1 1/2 cups of pitted dates chopped

1 1/2 cups of soy cream

enough maple syrup to sweeten the soy cream

Pack the pitted dates into small potts that you'll eat them out of.  Then cover the dates with the banana whip, then cover that with the sweetened soy cream that you may also have to whip.  Sorry I haven't tried it yet, so this is all just a bit of guidance, rather than a proven method of putting it together.  If you try it please tell me how it went.  I'll try it on Monday.  While the others eat my, 'baked,' Vanilla Cupcakes, I will eat my Vegan Banoffee Pie.  Eat straight out of the pot.  You can sprinkle some toasted Almonds on top, some Cocoa Powder, whatever you like.  See how you go.

Till then.

I've never heard of that before, but it kind of sounds yummy. I'm not a big soy person, but I suppose it'd work with light whipped cream, maybe?

You can have it anyway you want. : ) If your body can cope with dairy cream, then go for it. I have the same reaction to it, that I get from msg. Not fun.

I'm listening to Jai Ho again. I'm in such a great mood. :) Hope you are too. x
